How To Make The Clover Club
The Clover Club is a delicious pre-prohibition cocktail where the signature ingredient is raspberry. Here we make the recipe from Julie Reiner, owner of my favorite bar in New York City called, you guessed it, "Clover Club".
EQUIPMENT
- Cocktail set (includes Boston shaker, jigger, bar spoon, hawthorne strainer, fine mesh strainer, julep strainer, muddler, cocktail picks)
- Coupe glasses
- Angled measuring jigger
- Citrus juice squeezer
Raspberry Syrup
- 1 cup (125g) fresh raspberries
- 2 cups (400g) superfine sugar
- 1 cup (230ml) water
- Saucepan
- Add raspberries and sugar into saucepan and muddle together
- Add water and bring to a simmer
- Stir and simmer for 10 minutes
- Strain into container
- Add a touch of vodka to help preserve
- Store in refrigerator for up to a month
Clover Club
- 1.5oz (45ml) of Plymouth (or dry) gin
- .5oz (15ml) of raspberry syrup
- .5oz (15ml) of fresh lemon juice
- .5oz (15ml) of dry vermouth
- 1/2 white of 1 large egg
- 2 fresh raspberries
- Add gin, raspberry syrup, lemon juice, and dry vermouth to a shaker tin with ice
- Shake for 10 seconds, and double strain out ice into shaker
- Add egg white to shaker tin
- Dry shake for 10 seconds
- Pour into chilled coupe glass
- Garnish with raspberries
